The Accomplisht Cook is by Robert May, cook to the aristocracy of Royalist England. Following training by his father and in Paris, he took an apprenticeship in London with the cook to the Star Chamber. He also worked for several country estates and thirteen households of minor English nobility.
This extensive book is especially rich in recipes for potages or soups.
